Paul Liebrandt at Racines by Brian Flanagan
Superstar chef Paul Liebrandt is doing a Summer residency at this Parisian-style bistro and will be there through the first week in September. I have been following Liebrandt for many years (Atlas, Papillon, Gilt, Corton, The Elm) and I can vouch that he is at the very top of his game. NY Times critic William Grimes praised his "daring, distinctive style" likening him to "a pianist who seems to have found a couple of dozen extra keys". He never stays anywhere very long so be sure to catch him before he disappears again. You can order a la carte from a small menu but I highly recommend his tasting menu which must be ordered for the whole table. Last Monday's dazzling five-course lineup: Diver Scallop with Sea Urchin
2015 Saint-Aubin 1er Cru Les Murgers des Dents de Chien, Francoise & Denis Clair
Chicken Wing Schnitzel
2016 Riesling Trocken, Weingut Keller
Grilled Lobster with Morels
2011 Corton-Charlemagne Grand Cru, Bonneau du Martray
Summer Squab with Sour Cherry and Lemon Balm
2012 Clos de Vougeot Grand Cru Vieilles Vignes, Dominique Laurent
Pure Chocolate with Black Caramel
BTW there was a terrific HBO documentary done on him - "A Matter of Taste: Serving Up Paul Liebrandt" that follows his career over a ten-year period. https://www.youtube.com/watch?v=RPaRhsFGM8g
